  • 2 cans cream of chicken or mushroom soup
  • 1 cup water
  • 2 cups milk
  • 1 envelope onion soup mix
  • 1½ cups shredded cheddar cheese
  • 3 boneless skinless chicken breasts (or thighs)
  • Salt and pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a mixing bowl, combine the rice, cream of chicken or mushroom soup, water, milk, and onion soup mix. Stir until well mixed and pour into the prepared baking dish.
  3. Sprinkle half of the shredded cheddar cheese over the mixture and gently stir to combine slightly.
  4. Place the chicken breasts on top of the mixture and season with salt and pepper.
  5. Cover tightly with aluminum foil and bake for 1.5 to 2 hours until the chicken is fully cooked.
  6. Remove foil, sprinkle remaining cheese on top, and return to oven uncovered for an additional 10 minutes until melted.
  7. Let it rest for 15-20 minutes before serving.
