  • 250g cream cheese, softened
  • 100g powdered sugar
  • 100g pistachio paste
  • 1 tsp vanilla extract
  • 200ml heavy cream, cold
  • 200g fresh raspberries
  • 50g sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch, dissolved in 1 tbsp water
  • 2 eggs
  • 50g sugar
  • 50g sifted flour
  • ½ tsp baking powder
  • 200g white chocolate
  • 100ml heavy cream
  • 2 tbsp pistachio paste
  • Green food coloring (optional)
  • Crushed pistachios
  • Fresh raspberries

Instructions

  1. Make the raspberry center by cooking raspberries with sugar and lemon juice until soft. Stir in cornstarch slurry and freeze in molds.
  2. Prepare the cheesecake filling by blending cream cheese, powdered sugar, pistachio paste, and vanilla extract. Fold in whipped heavy cream.
  3. Assemble the domes by layering cheesecake filling in silicone molds, inserting frozen raspberry centers, and topping with more filling. Freeze until firm.
  4. Bake the sponge base, cool it down, cut rounds to fit the molds, and press them onto the frozen domes.
  5. Make the mirror glaze with heated cream poured over white chocolate; mix in pistachio paste and cool slightly before glazing each dome.
  6. Decorate with crushed pistachios and fresh raspberries before serving.
