  • 1/2 cup liquid glucose/light corn syrup
  • A few drops black gel food coloring
  • 6 Granny Smith apples

Instructions

  1. Prepare your work surface by greasing baking paper on a tray.
  2. Insert bamboo skewers into the apples securely.
  3. In a saucepan, combine sugar, water, corn syrup, and food coloring over medium heat until dissolved.
  4. Allow the mixture to simmer without stirring, washing down the sides of the pot to prevent crystallization.
  5. Cook until reaching hard crack stage (150ºC/310ºF).
  6. Dip each apple into the caramel mixture and place on the prepared baking sheet to cool.
