12–15 frozen potstickers (store-bought or homemade)
4 cups chicken broth (or vegetable broth for vegetarian option)
1 tablespoon soy sauce
1 tablespoon sesame oil
2 teaspoons grated ginger
2 cloves garlic, minced
Optional: sliced mushrooms
Optional: spinach or bok choy
Optional: rice vinegar
Chopped green onions for garnish
Salt and pepper to taste
1 teaspoon chili oil or red pepper flakes (optional)
Instructions
In a large pot over medium heat, combine the chicken broth with soy sauce, sesame oil, grated ginger, and minced garlic. Stir well and bring to a boil.
Once boiling, gently add the frozen potstickers. Reduce heat to medium-low and cook for about 5-7 minutes or until heated through.
If desired, add sliced mushrooms or greens like spinach or bok choy during the last 2-3 minutes of cooking until tender.
Season the soup with salt, pepper, rice vinegar, chili oil, or red pepper flakes as desired. Stir well.
Serve hot in bowls garnished with chopped green onions.
