Ingredients

Scale
  • 4 ½ cups all-purpose flour
  • 1 tablespoon sugar
  • 2 ¼ teaspoons instant yeast
  • 1 teaspoon salt
  • 1 ¾ cups warm milk (or water)
  • 2 tablespoons melted butter
  • 9 cups water
  • ½ cup baking soda
  • 1 large egg (mixed with water)

Instructions

  1. In a stand mixer bowl, combine flour, sugar, yeast, warm milk, butter, and salt. Mix on medium speed for about 4-5 minutes until a smooth dough forms.
  2. Cover the bowl and let the dough rise in a warm place for 30-60 minutes until it doubles in size.
  3. Preheat oven to 450°F and line two baking sheets with parchment paper. Bring water and baking soda to a boil in a large pot.
  4. Divide risen dough into pieces and shape each into ropes, cutting them into bite-sized pieces.
  5. Boil each piece for 30 seconds before placing them on the prepared baking sheets.
  6. Brush with egg wash and sprinkle with salt before baking for 12-14 minutes until golden brown.
