  • 100g chicken breast, diced
  • 2 soft-boiled eggs
  • 1 cup broccoli florets
  • 1/2 cup cherry tomatoes
  • 2 tbsp feta cheese, crumbled
  • 1 tsp olive oil
  • Salt & freshly cracked black pepper to taste

Instructions

  1. Rinse the quinoa under cold water and cook according to package instructions until fluffy (about 15 minutes).
  2. Season diced chicken with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken for about 5-6 minutes until golden brown.
  3. Boil eggs in a pot of boiling water for about 7 minutes for jammy yolks. Cool under cold water before peeling and slicing in half.
  4. Steam broccoli florets for about 3-4 minutes until tender yet bright green.
  5. Assemble your bowl by layering quinoa as the base, followed by chicken, soft-boiled eggs, steamed broccoli, halved cherry tomatoes, and crumbled feta cheese. Season to taste.
