  • 375 g ready-rolled puff pastry
  • 400 g mincemeat
  • 40 g dried cranberries
  • Zest of 1 clementine
  • 1 beaten egg (for brushing)
  • 1 tbsp icing sugar (for dusting)

Instructions

  1. Preheat your oven to 200°C (180°C fan/ Gas 6) and line two baking sheets with baking paper.
  2. Unroll the puff pastry on a clean surface and spread the mincemeat evenly, leaving a small gap on the edges.
  3. Scatter dried cranberries over the mincemeat and zest the clementine directly onto the filling.
  4. Roll the pastry tightly from one long edge using baking paper as guidance.
  5. Refrigerate for 15 minutes if time permits to firm up before slicing.
  6. Cut into 2cm thick slices and place them on lined baking sheets, brushing each with beaten egg.
  7. Bake for 15-17 minutes until golden brown, then cool slightly before dusting with icing sugar.
