  • 1/2 cup butter
  • 2 cups all-purpose flour
  • 3 tablespoons cane sugar
  • 2 tablespoons cinnamon
  • 1/2 cup canned pumpkin
  • 2 cups almond milk (or milk of choice)
  • 4 eggs
  • 8 oz mascarpone cheese
  • 1 cup powdered sugar

Instructions

  1. Prepare the brown butter by heating butter in a small saucepan over medium-high heat, whisking continuously until golden brown.
  2. In a blender, combine flour, sugar, cinnamon, pumpkin, milk, eggs, and vanilla; blend until smooth. Add the browned butter and pulse until combined.
  3. Heat a nonstick skillet and pour enough batter to cover the bottom. Cook until bubbles form on top; flip and cook for another 30 seconds. Repeat until all batter is used.
  4. For the mascarpone filling, mix mascarpone with milk and powdered sugar until smooth.
  5. Assemble by spreading the filling over each crepe, folding as desired.
