  • 2 pounds beef flank steak
  • ¼ cup vegetable oil or more
  • Salt, pepper, cumin, and Sazon (adjust to taste)
  • 1 large bay leaf
  • 1 large onion (sliced)
  • 45 cloves garlic (minced)
  • 2 bell peppers (red or green, seeded and sliced into strips)
  • 2 tomatoes (sliced into strips)
  • 1 can (8 ounces) tomato sauce
  • 1 thyme sprig
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 12 cups beef broth
  • 12 packets Sazon (sub beef or chicken bouillon)
  • 23 tablespoons parsley/cilantro

Instructions

  1. Trim excess fat from the beef and season generously with salt, pepper, cumin, and Sazon.
  2. In a skillet over medium heat, heat oil and sear the beef for about 3-4 minutes on each side until browned.
  3. Add onions, garlic, bell peppers, tomatoes, and spices to the skillet; cook until softened (about 5 minutes).
  4. Pour in broth; transfer ¾ of the mixture to the slow cooker and add the seared beef.
  5. Cook on high for 3½–4 hours or low for 7–8 hours until fork-tender.
  6. Shred the beef after cooking; return it to the skillet with remaining sauce for a final stir before serving.
