  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 and 1/2 tsp vanilla extract
  • 2 large eggs
  • 3 cups all-purpose flour, spooned & leveled
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 and 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/8 tsp ground cloves
  • 4 large apples, peeled and diced
  • 1/4 cup salted butter, cubed
  • 2 tbsp apple cider (or 1 tsp lemon juice if cider isn’t available)
  • 1/2 cup brown sugar, packed
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • Pinch of flaky sea salt
  • 1/2 cup granulated sugar
  • 2 and 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp allspice
  • 1/8 tsp ground cloves
  • 1/4 cup salted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1 and 1/2 tbsp granulated sugar
  • 1/2 cup + 1 tbsp all-purpose flour
  • 3/4 tsp cinnamon
  • Pinch of salt

Instructions

  1. In a large bowl, cream the softened butter with an electric mixer on medium-high speed. Add the sugars and mix until creamed together with the butter, about 1 minute. Add the vanilla and eggs, mixing until just combined. Gradually add dry ingredients last, mixing until a dough forms. Chill for 30 minutes to make it easier to roll into balls.
  2. Rinse & peel your apples. Dice them into bite-sized chunks. In a medium pan over medium-high heat, add all apple filling ingredients; cook for about 15 to 18 minutes, stirring occasionally. Taste around 15 minutes for desired tenderness. Transfer mixture to a bowl to cool.
  3. Follow my easy, quick recipe for Salted Caramel Sauce. Let it cool at room temperature for about 20 minutes until thickened.
  4. Scoop dough into balls weighing approximately 65 grams each. Place them in an airtight container to chill; they should chill in the fridge for at least 4 hours or freeze for about 2 hours.
  5. While dough chills, preheat your oven to 350° F. Melt butter in a mixing bowl; stir in remaining streusel ingredients until crumbly. Spread on a parchment-lined pan and bake for about 12–14 minutes until golden brown. Break pieces up as desired while cooling.
  6. Preheat your oven to 365° F again if needed. Line cookie sheets with parchment paper or silicone mats. Roll dough balls in cinnamon-sugar mixture before placing about six on each sheet with space for spreading. Bake for about 10–12 minutes until edges are set.
  7. Once cooled slightly, spoon apple pie filling into each cookie center, sprinkle crumble topping over them, then drizzle with salted caramel sauce.
  8. Enjoy these delicious cookies immediately after assembly! Store any leftovers in an airtight container in the fridge for up to five days; avoid leaving them out overnight due to fresh fruit content.
