  • 1 pound ground turkey sausage
  • 5 tablespoons unsalted butter (divided)
  • 3 cups milk (1%, 2%, or whole)
  • 1/2 cup heavy cream
  • 1/4 cup sour cream
  • 2 cups shredded extra-sharp Cheddar cheese
  • 21/4 cups mirepoix (or diced carrots, celery, and onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • Seasonings: dried parsley, dried basil, salt, pepper

Instructions

  1. In a large pot over medium-high heat, brown the ground turkey sausage until deeply colored. Remove and set aside.
  2. In the same pot, melt 1 tablespoon of butter. Add mirepoix vegetables and sauté for about 5 minutes until softened. Stir in minced garlic.
  3. Add chopped potatoes along with dried herbs, salt, and pepper. Pour in chicken stock; bring to a boil and then simmer until potatoes are fork-tender.
  4. Meanwhile, in a separate pot, melt remaining butter and whisk in flour for about a minute. Gradually add milk while whisking until thickened. Stir in heavy cream off heat.
  5. Combine the creamy mixture with the soup base, add cheese gradually until melted, then stir back in the cooked sausage.
  6. Serve warm with buttered bread if desired.
