  • 2 slices whole grain or sourdough bread
  • 2 soft-boiled eggs
  • 1 tbsp cream cheese or cashew spread
  • 2 slices fresh tomato
  • 45g cremini mushrooms, sliced
  • 1 cup fresh spinach
  • 1 tsp olive oil or butter
  • Salt & freshly ground black pepper
  • Chili flakes (optional)
  • Fresh parsley for garnish

Instructions

  1. In a medium saucepan, boil water. Gently add the eggs and cook for about 7 minutes. Transfer to an ice bath immediately after boiling.
  2. In a frying pan over medium heat, add olive oil or butter. Sauté mushrooms until golden brown (4-5 minutes), then add spinach until wilted.
  3. Spread cream cheese on one slice of toast and top with tomato slices. Add sautéed mushrooms to the second slice.
  4. Plate both pieces of toast alongside halved soft-boiled eggs and sautéed spinach. Season as desired and garnish with fresh parsley.
