  • 2 tbsp oil
  • 1 ½ cup dried white kidney beans
  • 1 ½ cup dried Romano beans
  • 2 onions, finely diced
  • 2 carrots, shredded or diced
  • 4 smoked sausages, roughly chopped
  • 4 cloves garlic, grated
  • 2 tbsp flour
  • 1 tbsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Soak the beans in water for at least 6 hours. Drain and boil in fresh water for about 20 minutes. Drain again.
  2. In a large soup pot, heat oil over medium heat and brown the smoked sausage for about 5 minutes; set aside.
  3. In the same pot, sauté onions and carrots with salt until soft (about 5 minutes).
  4. Add soaked beans, sausage, approximately 4 liters of water, and bay leaf; cook for 40-45 minutes over medium heat.
  5. For thickening, heat oil/butter in a small pan, add garlic for 30 seconds; stir in flour and smoked paprika. Cook briefly before mixing into the soup.
  6. Simmer together for an additional 5 minutes before serving.
