  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 teaspoons dried Italian herbs (oregano, thyme, basil)
  • 1 cup frozen peas and carrots
