  • 1 poblano pepper
  • 2 cloves garlic
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp sea salt
  • 1 tbsp olive oil or avocado oil
  • 2 cups frozen corn
  • 2 medium russet potatoes
  • 1 chipotle pepper in adobo sauce
  • 2 tbsp adobo sauce
  • 1 lb chicken breast
  • 6 cups chicken broth
  • 8 oz cream cheese or crème fraîche
  • 6 slices of Turkey Bacon
  • 2 limes
  • cilantro
  • 1/2 cup cotija cheese

Instructions

  1. Sauté diced onion, poblano pepper, and minced garlic in olive oil until softened.
  2. Stir in chili powder and cumin; cook until fragrant.
  3. Transfer the mixture to your slow cooker and add corn, potatoes, chipotle pepper, adobo sauce, chicken breast, and broth.
  4. Cover and cook on low for 6–8 hours.
  5. In the last 30 minutes, stir in cream cheese until melted.
  6. Serve hot with desired toppings.
