  • 2 pounds beef shoulder or beef butt, cut into chunks
  • 1 can (20 ounces) pineapple chunks, drained (juice reserved)
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a mixing bowl, combine reserved pineapple juice, soy sauce, brown sugar, garlic, ginger, salt, and pepper. Mix well.
  2. Place beef chunks in the slow cooker and pour the sauce mixture over them to coat evenly.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  4. During the last hour of cooking, add pineapple chunks.
  5. To thicken the sauce, mix cornstarch with water to create a slurry. Remove beef and pineapple from the slow cooker.
  6. Pour liquid into a saucepan; add slurry and heat until thickened.
  7. Return beef and pineapple to the slow cooker and pour thickened sauce over them.
  8. Garnish with green onions before serving.
