Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugars until fluffy.
  3. Mix in pumpkin purée, egg, and vanilla extract until smooth.
  4. In another bowl, combine flour, baking powder, baking soda, salt, and spices.
  5. Gradually add dry ingredients to the wet mixture; stir until just combined.
  6. Drop spoonfuls of dough onto a lined baking sheet with space between cookies.
  7. Bake for 12–15 minutes until edges are lightly golden; cool on a wire rack.
  8. For frosting, beat butter and cream cheese until smooth; gradually add icing sugar and vanilla until fluffy.
  9. Once cookies cool completely, generously frost them.
