  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract
  • ½ cup strawberry jam
  • Pink glaze (made with powdered sugar and a few drops of milk)
  • Sparkling sugar for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, baking powder, and salt; set aside.
  3. In another bowl, cream softened butter with granulated sugar and vanilla extract until light and fluffy. Add the egg and mix well.
  4. Gradually incorporate the dry ingredients into the wet mixture until just combined. If using, fold in pink food coloring.
  5. For the filling, blend cream cheese with powdered sugar, vanilla extract, and strawberry jam until smooth.
  6. Drop spoonfuls of dough onto a lined baking sheet, creating an indentation in each for filling.
  7. Bake for 10–12 minutes until edges are golden. Allow to cool slightly before filling with cheesecake mixture.
  8. Drizzle with pink glaze made from powdered sugar and milk; sprinkle sparkling sugar on top.
