  • 1 (28-ounce) can whole tomatoes
  • 1/4 cup + 3 tablespoons olive oil
  • 2 cloves garlic
  • 1 tablespoon fresh oregano
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1 (7-ounce) package cut fideo pasta
  • 1 quart chicken broth or vegetable broth
  • 1/3 cup chopped cilantro

Instructions

  1. In a blender, combine the whole tomatoes, olive oil (1/4 cup), garlic, oregano, salt, and cumin. Blend until smooth and set aside.
  2. In a large soup pot, heat the remaining olive oil (3 tablespoons) over medium heat. Add the fideo pasta and toast for about 4 minutes until golden brown.
  3. Pour the prepared tomato base into the pot with the toasted noodles. Fry for 1-2 minutes before adding the chicken or vegetable broth. Bring to a boil, reduce heat to low, cover, and simmer for about 5 minutes until pasta is cooked.
  4. Stir in chopped cilantro just before serving. Ladle into bowls and enjoy.
