  • 1 teaspoon baking powder

  • 8 oz reduced-fat cream cheese
  • 1 cup icing sugar
  • zest from one lemon

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease or line a 9×9 inch baking pan with parchment paper.
  3. In a bowl, whisk together eggs, brown sugar, canola oil, honey, and vanilla until smooth.
  4. Stir in grated carrot and zucchini.
  5. In another bowl, combine flour, baking powder, ground ginger, and baking soda; gradually add to wet ingredients until just mixed.
