  • 1 salmon fillet (56 oz)
  • 1 cup baby potatoes
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp dried dill (or fresh, chopped)
  • Salt and pepper to taste
  • Olive oil or butter
  • Avocado, sliced
  • 2 soft-boiled eggs

Instructions

  1. Boil the baby potatoes in salted water for 10-12 minutes until tender. Drain and toss with olive oil or butter, dill, and salt.
  2. Season the salmon fillet with smoked paprika, garlic powder, salt, and pepper. Heat olive oil in a non-stick skillet over medium heat and sear the salmon for 3-4 minutes on each side until cooked through.
  3. In another pot, boil water and add the eggs for 7-8 minutes for jammy yolks. Place them in cold water before peeling.
  4. To assemble your bowl, layer seared salmon alongside dill potatoes, top with avocado slices, and garnish with halved boiled eggs. Serve warm.
