4 boneless, skinless chicken breasts
2 tbsp olive oil
1 cup chicken stock
1 cup heavy cream
3 tbsp peri-peri sauce
2 cups cooked white rice
3 cloves garlic
1 medium onion, finely chopped
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
Salt and pepper, to taste
1 tsp lemon juice
Fresh parsley, chopped (for garnish)
Instructions
Season chicken breasts with smoked paprika, garlic powder, onion powder, salt, and pepper.
Heat olive oil in a skillet over medium-high heat and sear chicken until golden brown on both sides (about 3-4 minutes each side). Remove and set aside.
In the same skillet, sauté chopped onion and minced garlic until soft.
Pour in chicken stock, scraping up browned bits from the pan. Add heavy cream, peri-peri sauce, and lemon juice; simmer until slightly thickened.
Return the chicken to the skillet and coat it in the sauce; simmer until cooked through (internal temperature should reach 165°F).
Serve over garlic rice garnished with fresh parsley.
