  • Salt & pepper to taste
  • 1 cup cooked ground turkey or beef, seasoned with taco/fajita spices
  • 1 tsp olive oil for cooking
  • 1 avocado, sliced
  • Red pepper flakes
  • 1 cup cottage cheese
  • Optional: a drizzle of hot sauce or sriracha

Instructions

  1. Preheat the oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25 minutes until golden brown.
