  • 4 medium tortillas (flour, whole wheat, or gluten-free)
  • 2 cups fresh spinach (chopped)
  • 1 cup feta cheese (crumbled)
  • 2 tablespoons olive oil or butter (for cooking)
  • 1/4 cup sun-dried tomatoes (chopped)
  • 1/4 cup black olives (sliced)
  • 1/2 cup cooked grilled chicken (diced)

Instructions

  1. Prepare your ingredients by chopping fresh spinach, sun-dried tomatoes, and black olives. Dice the grilled chicken if necessary.
  2. Heat a non-stick skillet over medium heat and add olive oil or butter.
  3. On one half of each tortilla, layer chopped spinach, crumbled feta, sun-dried tomatoes, black olives, and diced chicken. Fold the tortilla in half.
  4. Place folded quesadillas in the skillet and cook for about 3–4 minutes on one side until golden brown. Flip using a spatula and cook for another 3–4 minutes on the other side.
  5. Remove from heat once crispy and golden; cut into wedges and serve warm.
