Ingredients

Scale
  • 1 box (13.25 oz) vanilla cake mix
  • ⅓ cup neutral oil (vegetable, canola, or avocado)
  • 1 cup milk or water
  • 4 large eggs
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 12 oz candy melts
  • Sprinkles or nonpareils for decoration

Instructions

  1. Preheat your oven to 325°F (162°C). Prepare your baking pan as directed on the cake mix box.
  2. In a large bowl, combine the cake mix, oil, milk or water, eggs, and softened butter; mix until smooth.
  3. Pour the batter into the prepared pan and bake according to package instructions until a toothpick inserted comes out clean.
  4. Once cooled, crumble the cake into fine pieces in a mixing bowl.
  5. In another bowl, prepare the buttercream by mixing together powdered sugar, vanilla extract, salt, and milk until smooth.
  6. Combine the crumbled cake with the buttercream until fully incorporated; roll into balls.
  7. Chill the cake balls for about 15 minutes while melting candy melts in a microwave-safe bowl.
  8. Dip lollipop sticks into melted candy and insert into each ball; chill again briefly.
  9. Coat each pop in melted candy melts, tapping off excess before decorating with sprinkles.
