  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 cup mashed bananas (about 2 bananas)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • ¾ cup buttermilk
  • 8 tbsp butter (for toffee sauce)
  • ¾ cup brown sugar (packed, for toffee sauce)
  • ¾ cup heavy cream (for toffee sauce)
  • 1 tsp vanilla extract (for toffee sauce)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking dish (9x9x3” or 9x11x3”) with nonstick spray.
  2. In a large bowl, cream together the granulated sugar, brown sugar, and butter until light and fluffy. Mix in the eggs, buttermilk, maple syrup, and mashed bananas until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually incorporate the dry ingredients into the wet mixture; stir until just combined.
  5. Pour the batter into the prepared baking dish and bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
  6. For the toffee sauce, melt butter and brown sugar in a pot over medium-low heat; stir until smooth. Add heavy cream and vanilla extract; cook without boiling for about five more minutes.
  7. Once the cake is slightly cooled, poke holes in it with a toothpick and pour the toffee sauce over it. Allow it to soak for at least an hour before serving.
