  • 3 cups granulated sugar

  • 3 cups cake flour, sifted

  • 1 tsp salt
  • 1 1/2 cups heavy whipping cream
  • 1 cup powdered sugar
  • 1/2 cup strawberry jam or preserves
  • 1 cup fresh chopped strawberries
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp strawberry puree or juice
  • 1 tbsp milk (as needed for consistency)
  • Fresh halved strawberries (for decoration)

Instructions

  1. Preheat oven to 325°F (163°C) and grease three 8-inch cake pans.
  2. Cream together the softened butter and cream cheese until fluffy. Gradually add sugar and beat well.
  3. Add eggs one at a time, mixing after each addition. Stir in vanilla extract.
  4. Sift together the cake flour and salt; gradually mix into the wet ingredients until just combined.
  5. Divide the batter among prepared pans and bake for 30-40 minutes or until a toothpick comes out clean. Let cool completely.
  6. For the strawberry filling, whip cream until soft peaks form, then add powdered sugar and vanilla; fold in cream cheese and jam, then add strawberries.
  7. Assemble the cake by layering with strawberry filling between each layer and frosting the outside with remaining filling.
  8. Chill before serving.
