  • 1 tbsp olive oil
  • 1 shallot, finely chopped
  • 2 cups sliced mushrooms (Portobello, Cremini, or Shiitake)
  • 1 tsp thyme (fresh or dried)
  • 1 tbsp balsamic vinegar (optional)
  • Salt and pepper to taste
  • 4 slices Swiss cheese (or Gruyère)
  • 8 slices of sturdy bread (Rye, Sourdough, or Artisan)

Instructions

  1. In a skillet over medium heat, add sliced mushrooms and sauté until moisture evaporates (5–7 minutes).
  2. Stir in butter, olive oil, shallots, thyme, and optional balsamic vinegar; cook until mushrooms are golden brown (another 5 minutes). Season with salt and pepper.
  3. Butter one side of each slice of bread. On four unbuttered sides, layer Swiss cheese, mushroom mixture, and another slice of cheese before topping with another slice of bread (buttered side up).
  4. Cook sandwiches in a skillet or panini press for 2–3 minutes per side until golden brown and cheese melts.
