  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 200 g mascarpone cheese
  • 100 g whipping cream
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons cocoa powder (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, espresso powder, baking powder, baking soda, and salt.
  3. In a stand mixer, cream softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Add egg and vanilla extract; beat until combined.
  5. Gradually mix in dry ingredients until just combined.
  6. Scoop dough onto the baking sheet and bake for 12 minutes or until edges are golden.
  7. In another bowl, whip together mascarpone cheese, whipping cream, powdered sugar, and vanilla until smooth.
  8. Once cookies cool, spread mascarpone cream on each cookie and dust with cocoa powder before serving.
