Instructions

  1. Prepare a cornstarch slurry by mixing two tablespoons of water with cornstarch in a small bowl.
  2. Heat oil in a soup pot over medium heat; sauté garlic and ginger until fragrant (about 30 seconds).
  3. Add chopped tomatoes; sauté for 3-4 minutes until soft.
  4. Stir in half of the chopped green onions; cook for another 30 seconds.
  5. Pour in chicken stock; bring to boil, then simmer gently.
  6. Season with soy sauce, salt, white pepper, and sesame oil; mix well.
  7. Slowly add cornstarch slurry while stirring to avoid lumps; let simmer for one minute.
  8. Beat eggs until smooth; drizzle into the pot while stirring gently to form ribbons.
  9. Allow soup to simmer for an additional minute before serving.
  10. Ladle into bowls and garnish with remaining green onions.
