1 boneless chicken thigh or breast (about 150g)
1 tsp olive oil
Salt and pepper to taste
2 medium tomatoes, sliced
1 medium tomato, diced
2 hard-boiled eggs, peeled and sliced
Instructions
Boil the Eggs: Place eggs in a pot of cold water. Bring to a boil over medium heat. Reduce heat and simmer for 9-10 minutes. Cool under cold water, then peel and slice.
Cook the Chicken: Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for 4-5 minutes per side until golden brown and fully cooked (internal temperature should reach 165°F). Let rest before slicing.
Prep the Tomatoes: Slice two tomatoes into thick rounds and dice one finely.
