  • 1 lb large shrimp, peeled and deveined
  • 2 cups cooked jasmine or basmati rice
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper, diced
  • 1/2 cup shredded carrots
  • 1 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce or coconut aminos
  • Juice of 1 lime
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare all ingredients: chop the bell pepper, slice the avocado and onion, and cut the pineapple if using fresh.
  2. In a large skillet over medium heat, add olive oil. Once hot, add shrimp seasoned with garlic powder, smoked paprika, salt, and black pepper. Cook until pink and opaque (about 3–4 minutes).
  3. Stir in cooked rice, pineapple chunks, bell pepper, carrots, and onion. Drizzle with soy sauce or coconut aminos and mix until heated through.
  4. Serve in bowls topped with avocado slices and fresh cilantro. Squeeze lime juice over each serving for added zest.
