  • 1 cup hot reduced-fat milk
  • 1 egg yolk
  • 3 cups all-purpose flour
  • 2 ½ tablespoons sugar
  • 2 ¼ teaspoons active dry yeast
  • 1 ½ tablespoons butter
  • 1 teaspoon salt
  • Black food coloring
  • Red food coloring

Instructions

  1. In a small bowl, whisk together hot milk and egg yolk. Set aside.
  2. In a large bowl or stand mixer, combine flour, sugar, and yeast.
  3. Add the warm milk mixture along with butter and salt to the dry ingredients; stir until mixed.
  4. Knead by hand for about 10 minutes or use a stand mixer with a dough hook for about 5 minutes until smooth.
  5. Divide kneaded dough into two or three portions; let rest briefly in covered bowls.
  6. Color each portion with food coloring (black for one, red for another) by kneading until fully incorporated.
  7. Cover again and allow to rise in a warm area until doubled in size (about 1.5 hours).
  8. Punch down risen dough; transfer to a floured surface and shape into rectangles before stacking them in color order.
  9. Roll tightly into a loaf shape and place in a greased loaf pan.
  10. Cover and let rise again until doubled (about one hour).
  11. Preheat oven to 375°F (190°C) during final rise.
  12. Bake for about 30 minutes or until it sounds hollow when tapped.
  13. Cool completely before slicing.
