  • 1 cup raw, unsalted walnut pieces
  • 1/2 cup pumpkin seeds
  • 1/4 cup maple syrup
  • 2 teaspoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup olive oil
  • 1/3 cup plain yogurt (or vegan yogurt)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon finely chopped fresh thyme
  • 1 tablespoon dijon mustard
  • 1 tablespoon maple syrup
  • 1 ¼ teaspoons salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat your oven to 275°F.
  2. In a mixing bowl, combine walnut pieces and pumpkin seeds. In another bowl, mix maple syrup, olive oil, salt, and pepper. Pour over nuts and toss to coat evenly.
  3. Spread the mixture on a parchment-lined baking sheet and bake for about 35 minutes until golden brown, stirring halfway through. Allow to cool before breaking into pieces.
  4. For the dressing, whisk olive oil, yogurt, apple cider vinegar, thyme, mustard, maple syrup, salt, and pepper in a small bowl until smooth.
  5. Assemble the salad: Combine chopped romaine lettuce, halved grapes, sliced celery, diced apples, cranberries, and pomegranate arils in a large bowl. Drizzle with dressing and toss gently.
  6. Top with walnut-pumpkin seed brittle before serving.
