  • 2 ½ pounds beef stew meat
  • 2 cups chopped yellow onions
  • 4 minced garlic cloves
  • 5 medium carrots, chopped
  • 1 pound baby Yukon gold potatoes, halved
  • 4 cups beef stock
  • 1 cup apple vinegar
  • Olive oil
  • ¼ cup flour
  • ½ teaspoon black pepper
  • ½ teaspoon garlic salt
  • ½ teaspoon celery salt
  • 2 bay leaves
  • 1 rosemary sprig
  • 1 cup frozen peas

Instructions

  1. Pat the beef stew meat dry and season with black pepper, garlic salt, and celery salt. Dredge in flour until fully coated.
  2. In a skillet over medium-high heat, heat olive oil and sear the meat until browned on all sides. Set aside.
  3. In the same skillet, sauté chopped onions and minced garlic until softened.
  4. Transfer seared meat and sautéed vegetables into a crockpot. Add apple vinegar, beef stock, carrots, potatoes, bay leaves, and frozen peas.
  5. Cook on low for about 210 minutes or until meat is tender. Stir occasionally if possible.
  6. For a thicker consistency, mix cold water with cornstarch and stir into the stew during the last 30 minutes of cooking.
