  • 1 can (400g) chickpeas, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a mixing bowl, combine sliced zucchini, drained chickpeas, sliced bell pepper, and onion. Drizzle with olive oil and season with oregano, smoked paprika, salt, and pepper.
  3. Spread the vegetable mixture evenly on the prepared baking sheet in a single layer.
  4. Roast in the oven for 25–30 minutes, tossing halfway through until tender and golden brown.
  5. Remove from the oven and sprinkle crumbled feta cheese on top. Return to the oven for an additional 5 minutes.
  6. Garnish with fresh parsley before serving warm.
